Try Bagara Baingan Recipe for a Flavorful Sehri Experience Urdu vegetable Recipe

Ingredients for Masala:

Coriander seeds 1 tbsp

Desiccated coconut 1/2 cup

Peanuts 1/4 cup

Poppy seeds 2 tbsp

Sesame seeds 1 tbsp

Dried red whole-button chilies 4-5

Salt 1/2 tsp

Water 1 cup

Prepared masala

Eggplants (7-8)

Oil 1/4 cup

Onion (chopped) 1 cup

Cumin seeds 1 tbsp

Curry leaves 8-10

Mustard seeds 1 tsp

Ginger garlic paste 2 tbsp

Red chili powder 1 tbsp

Coriander powder 2 tbsp

Turmeric powder 1 tsp

Salt 1 tsp

Hot water 1 cup + 1/2 cup

Tamarind pulp 1 cup

In a preheated pan add peanuts, sesame seeds, and poppy seeds, and roast for 1 min.

Now add desiccated coconut, dried red whole button chilies, and coriander seeds and roast for another min.

Now transfer the roasted spices into a jar, add salt, and water, and blend into a smooth paste with a hand blender. Set aside.

Take eggplants and place deep crisscross cuts on them. Now fill them with prepared masala and set them aside.

In a pot heat oil and onion. Cook for a min. now add mustard seeds, cumin seeds, dried red whole button chilies, curry leaves, ginger garlic paste, and cook for another min.

Now add red chili powder, coriander powder, turmeric powder, and salt and mix it well.

Add leftover prepared masala and mix it again. Add 1 cup of hot water and cook until starts to simmer.

Now add stuffed eggplants and mix them well. add tamarind pulp, and 1/2 cup of hot water, and cover and cook for 20-25 mins or until eggplants are fully done.

Your Bagaray Baingan are ready. Serve and enjoy.

مصالحہ بنانے کے لئے پہلے سے گرم پین میں مونگ پھلی اورخشخاش ڈال کر ایک منٹ روسٹ کر لیں۔

اب اس میں خشک ناریل، سوکھی ثابت لال مرچیں اور دھنیا ڈال کر ایک منٹ روسٹ کر لیں۔

پھر روسٹے کئے ہوئے مصالحے کو ایک جار میں ڈال کر اس میں نمک اورپانی ڈال کر ہینڈ بلینڈر سے پیسٹ میں بلینڈ کرلیں۔

4 .

بھگارے بینگن بنانے کے لئے بینگن لے کر ان پر گہرے کانٹے کی شکل کٹس رکھیں۔ اب ان میں تیار مصالحہ بھر کر سائیڈ پر رکھ دیں۔

5 .

اب ایک برتن میں کھانے کا تیل گرم کرکے اس میں پیازڈال کر ایک منٹ تک پکائیں۔ پھر اس میں رائی دانہ، زیرہ، سوکھی ثابت لال مرچیں،کڑیپتے اور ادرک لہسن کا پیسٹ ڈال کر ایک منٹ تک پکائیں۔
