Ingredients:

• 2 cups of basmati rice

• 2 tablespoons of oil or ghee

• 1 large onion, sliced
• 1 teaspoon of ginger paste

• 1 teaspoon of garlic paste

• 1 teaspoon of cumin seeds

• 2 bay leaves

• 2 cinnamon sticks

• 2 cardamom pods

• 2 cloves

• 1 teaspoon of salt

• 3 cups of water

• 1 cup of mixed vegetables (carrots, peas, potatoes, etc.)

• 1 tablespoon of biryani masala (you can find this at an Indian grocery store or online)

• A handful of fresh cilantro, chopped

Instructions:

• Rinse the basmati rice several times until the water runs clear. Soak the rice in cold water for 30 minutes.

• Heat the oil or ghee in a large pot over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 10 minutes.

• Add the ginger paste, garlic paste, cumin seeds, bay leaves, cinnamon sticks, cardamom pods, and cloves to the pot. Sauté for a few more minutes until fragrant.

• Drain the rice and add it to the pot. Add the salt and stir until the rice is coated in the spices.

• Add the water and mixed vegetables to the pot. Stir everything together.

• Add the biryani masala and stir it into the rice mixture.

• Bring the mixture to a boil over high heat. Once it boils, reduce the heat to low and cover the pot. Let the rice cook for about 20 minutes.

• After 20 minutes, turn off the heat and let the biryani sit for 5-10 minutes. Fluff the rice with a fork and add the chopped cilantro.

• Serve hot with raita (yogurt sauce) and/or pickle on the side.
