 Biryani Recipe 



Here is a simple recipe for chicken biryani:

Ingredients:

  • 1 kg chicken, cut into pieces
  • 2 cups basmati rice
  • 3 large onions, sliced
  • 5 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • Salt, to taste
  • 2 green chilies, sliced
  • 2 cups water
  • 1/2 cup yogurt
  • 2 tablespoons ghee or oil
    • 2 cinnamon sticks
    • 4 green cardamom pods
    • 4 cloves
    • 1 bay leaf
    • A handful of fresh mint leaves
    • A handful of fresh cilantro leaves
    • A pinch of saffron, soaked in 2 tablespoons of warm milk
    • Juice of 1 lemon
    • Fried onions, for garnish


  • Instructions:
  • In a large pot, heat the ghee or oil over medium heat. Add the cinnamon sticks, green cardamom pods, cloves, and bay leaf. Stir for a few seconds.
  • Add the sliced onions and cook until they are golden brown.
  • Add the garlic and ginger and cook for another minute.
  • Add the chopped tomatoes and cook until they are soft.
  • Add the chicken pieces and cook until they are browned on all sides.
  • Add turmeric powder, chili powder, coriander powder, cumin powder, and salt. Stir well.
  • Add the green chilies, mint leaves, cilantro leaves, and yogurt. Stir to combine.
  • Add the water and bring it to a boil.
  • Add the rice and stir to combine.
  • Cover the pot and reduce heat to low. Cook for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
  • Fluff the rice with a fork and mix in the saffron milk and lemon juice.
  • Serve hot, garnished with fried onions.
