Biryani Recipe
Here is a simple recipe for chicken biryani:
Ingredients:
- 1 kg chicken, cut into pieces
- 2 cups basmati rice
- 3 large onions, sliced
- 5 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- Salt, to taste
- 2 green chilies, sliced
- 2 cups water
- 1/2 cup yogurt
- 2 tablespoons ghee or oil
- 2 cinnamon sticks
- 4 green cardamom pods
- 4 cloves
- 1 bay leaf
- A handful of fresh mint leaves
- A handful of fresh cilantro leaves
- A pinch of saffron, soaked in 2 tablespoons of warm milk
- Juice of 1 lemon
- Fried onions, for garnish
- Instructions:
- In a large pot, heat the ghee or oil over medium heat. Add the cinnamon sticks, green cardamom pods, cloves, and bay leaf. Stir for a few seconds.
- Add the sliced onions and cook until they are golden brown.
- Add the garlic and ginger and cook for another minute.
- Add the chopped tomatoes and cook until they are soft.
- Add the chicken pieces and cook until they are browned on all sides.
- Add turmeric powder, chili powder, coriander powder, cumin powder, and salt. Stir well.
- Add the green chilies, mint leaves, cilantro leaves, and yogurt. Stir to combine.
- Add the water and bring it to a boil.
- Add the rice and stir to combine.
- Cover the pot and reduce heat to low. Cook for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
- Fluff the rice with a fork and mix in the saffron milk and lemon juice.
- Serve hot, garnished with fried onions.
